According to the Guinness Book of Records Hiltl was the first vegetarian restaurant in the world. It was founded in Zurich in 1898 by Ambrosius Hiltl and is now run by the fourth generation of the Hiltl family. It is now an à la carte restaurant, self-service buffet and takeaway, a bar-lounge, a club, a cooking studio and a shop (https://hiltl.ch/en/).
tibits is a growing chain of restaurants in Germany, Switzerland and London dedicated to delicious and fresh vegetarian and vegan buffet (http://www.tibits.co.uk)/
Hiltl and tibits are united by the desire to explore and expand vegetarian and vegan cooking and create healthy and tasty meals for every opportunity. Together the two have produced their first purely vegan cookbook, featuring recipes from both restaurants.
